Cooking Method: Deep Fryer or Stove Top and Oven

Ingredients:
Filling
1 medium red onion
1 red pepper
1 green pepper
2 jalapeno (depending on how spicy you like it)
2 boneless chicken breasts
¼ tsp ground cumin
¼ tsp. chili seasoning mix (I used taco seasoning)
12 small flour tortillas (I only used 5 tortillas)
2 cups vegetable oil

Sauce
4 oz cream cheese at room temp.
½ cup sour cream
1 jalapeno
¼ cup half and half
2 garlic cloves; pressed
1 cup Mexican style cheese

Directions:

1. Heat small skillet; rub salt and pepper on chicken and cook on skillet until no longer pink. Dice onion, peppers, jalapenos, and chicken.
2. Return diced chicken, along with the onion, peppers, and jalapeno, to the skillet and add the seasonings to taste. Cook until vegetables are soft. Remove from heat
3. If you have a deep fryer start it up to heat, but if you don’t use a big pot such as a stock pot, and heat up the 2 cups of vegetable oil.
4. Warm flower tortillas and fill the tortillas with the chicken mixture and roll. Put toothpicks into the tortillas so they hold their shape while frying. Placed the filled tortillas in deep fryer or stock pot and cook until they are golden brown, about 10 minutes.
5. When tortillas are done place them on a paper towel to soak up some of the grease. Then put tortillas in a baking dish to fit all 12 and set aside
Preheat oven to 325
6. For topping: in a blender blend the cream cheese, sour cream, half and half, garlic, and jalapeno until creamy. Warm this up in the microwave and keep warm
7. Heat up the filled tortillas in oven.
8. Top tortillas with the warmed Cream cheese mixture and Mexican style cheese.
