Chicken & Wild Rice Soup

Ingredients:
1 6oz box long grain and wild rice mix, prepared according to package directions
1 Tbsp vegetable oil
2 boneless skinless chicken breast halves, cooked and chopped
1 Medium onion, chopped
2 cloves garlic, crushed
2 14.5oz cans chicken broth
½ tsp dried tarragon, crushed
¼ tsp dried thyme, crushed
¼ tsp salt
1/8 tsp ground pepper
1 12oz can evaporated milk
2 Tbsp corn starch


Directions:
Heat vegetable oil in large saucepan over medium high heat. And chicken, onion, and garlic; cook stirring occasionally until onions are tender.
Add rice, broth, tarragon, thyme, salt, and pepper; Bring to a boil over medium-high heat.
In a small bowl combine a small amount of the milk to the 2 Tbsp of cornstarch until smooth. Add to saucepan with remaining milk. Stirring occasionally, cook for 3 to 5 minutes or until soup is thickened. Garnish with Parmesan cheese.
