Creamy Chicken & Chile Enchiladas

I cannot find this recipe anywhere except on the can that the enchilada sauce comes in, So I thought I'd put it on here before I was never able to find the recipe again. I have never been a huge fan of enchiladas until I made this. I'm making this on Friday so I'll try to remember to take a picture and put it on here for you all.

Creamy Chicken & Chile Enchiladas

Prep time: 10 min. Cook time: 20 min. Ready in: 30 min. Servings: 6

Ingredients

  • 1lb cooked & diced boneless chicken breasts
  • 1 8oz package of cream cheese
  • 1 4.5oz can of chopped green chilies
  • 12 flour tortillas
  • 2 10oz cans green chile enchilada sauce
  • shredded cheddar cheese

Directions

  1. Heat oven to 400 degrees and spray a 3 quart baking dish with cooking spray.
  2. Warm up cooked and diced chicken, cream cheese and green chilies in a pan (or if you're running out of time, warm it up in the microwave) until cream cheese is melted.
  3. Spoon chicken filling onto tortillas; roll up and place seam side down in prepared baking dish. Pour enchilada sauce over top and sprinkle with cheddar cheese. Cook for 15 to 20 minutes or until hot and cheese is melted.
