The Best Chicken Salad

My mother-in-love bought me, a while ago, my favorite cookbook of all time! The Farm Chicks in the Kitchen! I just had to share one recipe out of the book with you and then you must go buy a book for your kitchen! Every recipe I have tried out of their book is absolutely to die for.

Elaine's Farm Style Chicken Salad Sandwiches

We have this usually once a week. It's a great dish to take on a picnic as well!

2 boneless skinless chicken breast

1/2 tsp garlic power (I use garlic salt)

1 tsp dried basil (I use 1/4 cup fresh chopped basil)

1/2 tsp dried rosemary

1/2 tsp salt

1/2 tsp ground pepper

3/4 cup mayo

1/3 cup chopped celery

1/4 cup sliced green onions (I personally prefer it without the green onions)

whole wheat bread, whole wheat tortillas (for wraps), or just salad greens (pictured above)

Cook the chicken:

Oven (slow) Method:

  1. Heat the oven to 350 degrees.
  2. Place chicken breasts in a shallow baking dish with 1 cup of water.
  3. Sprinkle the chicken with the garlic powder, basil, rosemary, 1/4 tsp salt, and 1/4 tsp of pepper.
  4. Cover with aluminum foil and bake until cooked through (My oven takes 45 min. to do this but the recipe says 25 to 30 minutes).
  5. Remove chicken from the baking dish to a plate. When cook enough to handle, cut the chicken into bite size pieces. (go to Make the Sandwiches step)

Stove Top (fast) Method:

  1. Place chicken breasts in a skillet with 1 cup of water.
  2. Sprinkle the chicken with the garlic powder, basil, rosemary, 1/4 tsp salt, and 1/4 tsp of pepper.
  3. Cooked covered for 15 minutes and flip the chicken once.
  4. Remove chicken from the skillet to a plate. When cook enough to handle, cut the chicken into bite size pieces. (go to Make the Sandwiches step)

Make the Sandwich:

While the chicken is cooling, Mix the mayo, celery, green onions, and remaining 1/4 tsp salt and 1/4 tsp pepper (you could also throw in more of the fresh basil if you are a basil fan) in a medium size bowl. Add the chicken (when chopped) and stir to coat.

Use for sandwiches (make sure to toast the bread first), chicken salad, or for wraps.
